Coal mining ravages Appalachia mountains February 29 2008

They’re ripping the tops off mountains in West Virginia coal country to feed our insatiable appetite for power. It’s cheaper that way. And the trees and the animals and the flooding? It may not be pretty, but we’ve got all those dishwashers to run.

Puff Pastry

Sour Cream (300ml)

Cheese, shredded (good hand full)

Eggs (3)

Bacon Bits (1/2 cup)

Nutmeg (good pinch)

2 garlic cloves, finely chopped

1 onion, chopped

1/2 tsp turmeric

1 tsp garam masala

1/2 tsp chilli powder

2 lb canned, chopped tomatoes, drained

1 cup red lentils

2 tsp lemon juice

2 1/2 cups vegetable bouillon

1 1/2 cups coconut milk

Salt and pepper

Chopped fresh cilantro and lemon slices, to garnish
