Coconut, shredded (130g)
Polenta, fine (130g)
Baking Powder (1 tsp)

- Combine ground almonds, coconut, polenta, baking powder and lemon zest.
- Using a mixer, beat in sugar and butter until pale and fluffy
- Add eggs one at a time, beating well after each.
- Fold in combined dry ingredients and lemon juice

Puff Pastry
Sour Cream (300ml)
Cheese, shredded (good hand full)
Eggs (3)
Bacon Bits (1/2 cup)
Nutmeg (good pinch)
- Thaw puff pastry, roll out flat, fit to pie plate
- Combine all ingredients and pour into pie plate
- Cook in oven at 425C for 45 minutes or until top is golden brown and center appears cooked

2 garlic cloves, finely chopped
1 onion, chopped
1/2 tsp turmeric
1 tsp garam masala
1/2 tsp chilli powder
2 lb canned, chopped tomatoes, drained
1 cup red lentils
2 tsp lemon juice
2 1/2 cups vegetable bouillon
1 1/2 cups coconut milk
Salt and pepper
Chopped fresh cilantro and lemon slices, to garnish
